Pasta has got to be one of my favourite dishes in the world. When I was a kid, mum would often make pasta for the family. But after moving out of home, visiting restaurants and cooking for myself, I’d have to say my pasta’s waay better than mums! (Sorry mum, you’ll always be better than me at Asian food though!)
I made up this easy recipe and it’s my personal favourite to cook at home. I basically a modified version of the Carbonara sauce – since I’m not a big fan of parmesan cheese and eggs.
INGREDIENTS
Handful of pasta (I used about 200g of fettuccini)
300ml cream
150g bacon
Handful of mushrooms and onions
METHOD
1. Dice the bacon, onions and mushrooms into small, bite size pieces
2. Pan fry the onions and bacon together with a dash of olive oil. Once the onions are soft, remove and place them aside. Then grill the mushroom in the same pan with a pinch of salt to help remove the moisture and place aside.
3. Bring a pot of water to the boil. Add sea salt and cook the pasta till it’s perfect, then strain and place aside.
4. Put the cooked bacon, onions and mushrooms into a saucepan and add 300ml cream. Bring to a boil for 5-10 minutes to reduce & thicken the sauce. Season with black pepper to taste. Remove from heat and add a small amount of butter and stir through.
5. Add a dash of olive oil to a hot pan, then place a serve of the cooked pasta and sauce into the pan. Stir gently for a few minutes then serve.
And there you have it! A very fast, simple and delicious meal for two. It takes less than 30 minutes to prepare this meal and believe me, it tastes very good – in fact, my mum likes it so much I have to make this every time I visit her =)
