What’s for dinner tonight? – Chicken Burrito

Today I was feeling a bit lazy and wanted to make something simple for dinner. These burrito kits are the perfect choice – nice and simple and a dinner for 2 can be done in 15 minutes. This is one of my favourite meals for a warm summer night, very healthy and very tasty.

To get started, you will need to get a Burrito Kit and some additional ingredients, all available at any supermarket.

600g Chicken Fillets (cut into long pieces approx 5cm each)
Lettuce (cos lettuce prefer)
Tasty cheese
1 Onion (optional, cut into slices)
1 Cucumber (optional)
1 Red capsicum (Optional)

Then it is as simple as these 3 simple steps.

1. Mix the chicken & Burrito seasoning in a bowl or plastic bag. Heat oil in a frying pan over a medium to high heat. Once the meat is sealed, turn down the heat and cook further until it’s golden brown. Add onions and cook until soft in the pan and then add half  of the chicken (depending on the size of the frying pan) for 5 minutes until golden brown. Remove & repeat with remaining chicken.

2. Open the tortillas pack, throw away the freshness sachet, separate each tortilla and heat them up. It can be heated up in the microwave for 40 seconds or the oven for 10 minutes.

3. Serve the warmed tortillas, topped with chicken, tomatoes, lettuce, cucumber, red capsicum, tasty cheese and mild Mexican Salsa (comes in the box)
