Chinese style Cucumber salad

This is one of dish will only take you 10 minutes to prepare. It is one of my favour receipt hand it down from my mum.

Ingredients:

  • 1 tablespoon soy sauce
  • 2 tablespoons Oyster sauce
  • 1 tablespoon of grated palm sugar or brown sugar
  • 1 tablespoon of sesame oil
  • 2 cloves garlic (if you are a big garlic friend, feel free to add more) finely chopped
  • 2 tablespoon of Chinese black Vinegar
  • 1 tablespoon of Chicken Bouillon Powder (The magic power I always used my cooking, shh….)
  • 2 Lebanese cucumber (prefer type)

Method to piece the cucumber:

  • Place the cucumber on top of the cutting board, cut the both end
  • Use the back of a knife blade, bash the cucumber evenly, until it has cracks on the cucumber, then use hand gently break the cucumber into small pieces ( as per picture)
  • Place all ingredients into a medium bowl, in no particular order.

  • Stir well to dissolve sugar and stand for 10 minutes before service.

Black vinegar is one of must-have sauce in my pantry. It has milder taste than regular white vinegar and taste cross between traditional balsamic and Worcester sauce. Black vinegar also is a popular ingredient used in north Chinese cooking, such as use for marinade or dipping sauce. Love it, with dumpling too.
